Step by Step Preparation

Corn tortilla chips

  1. Mix the corn flour, salt and water until a homogeneous dough is formed.
  2. Let it rest for 20 minutes, well covered.
  3. Divide into 20g portions and roll out very thinly between sheets of baking paper.
  4. Brush with oil and bake at 180ºC for 8-12 minutes, until golden brown and dry.
  5. Store in a dry place.

Traditional Turkey Stuffing

  1. Finely dice the onion, celery, and carrot.
  2. Sauté in oil for 5 minutes, add diced turkey breast, season with salt and pepper.
  3. Add thyme, deglaze with white wine, evaporate the alcohol.
  4. Add the stock and simmer until the turkey is tender (10-12 min).
  5. Remove from heat, add blueberries, chopped chestnuts/nuts and diced apple, sage.
  6. Mix well and add breadcrumbs to bind the mixture (it should be juicy but compact).
  7. Adjust the salt if necessary.

Dutch Pumpkin Mousse

  1. Roast the pumpkin (120 g) in the oven at 180ºC until caramelized. Puree with the stock, salt, pepper and pass through a fine sieve.
  2. Prepare the Dutch base: whisk egg yolks with a vinegar and lemon reduction in a bain-marie, without letting it curdle, until frothy. Slowly drizzle in clarified butter to emulsify.
  3. Combine the pumpkin cream with the hollandaise sauce, add plant-based cream and soy lecithin. Emulsify everything with a hand blender.
  4. Strain the mixture and pour it into a 0,5 l siphon, charge with N2O and shake.
  5. Keep at 55–60 ºC in a water bath until serving.

Assembly and Finishing

  1. Place the tortilla chips on a serving tray.
  2. Form small quenelles or mounds of the stuffed turkey and place them on each tortilla chip.
  3. Shake the siphon and dispense a cloud of pumpkin hollandaise foam onto each montage.
  4. Garnish with microgreens and a sprinkle of smoked salt flakes.
  5. Serve immediately (the contrast of textures is key).

  • You can add 1g of Xanthan Gum (Soda) to the pumpkin cream if you need to improve the texture without increasing the fat.
